THE HEALTHY EATING OPTION
Venison is so much more popular now because not only is it high in iron and protein, but it is also low in cholesterol and fat. In fact, venison is lower in fat than skinned chicken – whenever we mention this at a market or show people are absolutely amazed! So not only is it delicious, it is very healthy too.
What you see is what you get and, unlike beef, venison does not shrink away. Care should be taken, however, when cooking venison because it is very low in fat, it can dry out if overcooked and certainly does not need as much cooking as beef. The key is to make sure you rest your meat, which allows it to relax.
We produce a whole range of cuts, buy venison haunch, fillets, steaks, joints, casserole, burgers, sausages, shanks, mince, liver, heart and kidneys.
We buy in wild boar trim and make the most delicious sausages, which are very popular. We can highly recommend Toad in the Hole with our wild boar sausages, absolutely scrummy!
Additionally we buy pork collars and cure them to make mouth-watering bacon. We also add some black treacle to cure the bacon a second time and this is to die for!
We are always happy for you to ring and order anything to be put aside and collected from one of our local Farmers Markets or Shows. Visit us at Sleaford, Lincoln, Huntingdon, Ely, and many other locations. Alternatively you are welcome to visit our farm shop which is only open when we are there, so please ring and check to save a wasted journey, or use our Mail Order option.
If there is a specific cut of meat you require, a saddle or rack of venison, or a venison haunch for example, we are able to do this but need as much notice as possible – certainly for a Saturday market we would need to know on the Tuesday before to guarantee you get what you want.
